One of the hardest things about the Eat Local challenge is figuring out what to make, so I thought I would post some casual recipe ideas to help keep things exciting. Most of the ideas focus on just a few items; when one or more of the main ingredients can be found locally grown or in-season near you, give it a try. Tweak each one to your personal taste or pantry. Most will serve 4-6 people.
You will need: Small, fresh mozzarella balls, cherry tomatoes, red onion, fresh basil, olive oil and lettuce.
Combine 1 pint of small local mozzarella balls, 1 pint of locally grown cherry tomatoes, 1/2 red onion sliced thing and 2 tablespoons of garden fresh chopped basil. Splash with olive oil, season with salt and pepper and serve on a bed of fresh salad greens. Roast a little red pepper and cut it into strips as a garnish for a real treat. Serve with fresh, local crusty bread.
