You will need: Summer squash or zucchini, onion, chili pepper, garlic, corn kernels, fresh oregano and vegetable stock.
Slice 2 pounds of local summer squash or zucchini into half moons about 1/2 inch thick, and place in a medium-size baking dish. Add 1/4 cup each of diced onion and mild chili peppers (such as poblano or ancho), 1 tablespoon fresh chopped garlic and 1 cup cooked corn kernels. Add 2 tablespoons fresh chopped oregano and 1 cup chicken or vegetable stock. Cover and bake at 350 degrees for 45-60 minutes. Serve hot with jalapeno cornbread or homemade chili. Add salt and pepper to taste.
