Owners Steven and Jodi Ohlsen Read (and their four sons) make cheese by hand with milk from their own sheep near Northfield, Minn., just south of the Twin Cities metro area.

There, they make several different sheep's milk cheeses, including Friesago - similar to Manchego - Shepherd's Hope and Big Woods Blue. They also make other cheeses available on a limited basis, like Hidden Falls, Harmand, and traditional Ricotta.
