You will need: Sirloin steak, Roma tomatoes, scallions, cucumber, fresh cilantro, sesame ginger dressing, and lettuce.
Slice 1 pound of roasted or grilled and chilled locally raised sirloin steak into thin strips. In a bowl, mix together 2 Roma tomatoes (seeded and sliced into wedges), 1/2 cup sliced scallions, 1/4 cup fresh chopped cilantro and 2 cups of peeled, sliced, seeded cucumber. Add the beef to the vegetables and dress with 3/4 cup of your favorite locally made sesame ginger dressing. Garnish with fresh cilantro sprigs and serve on a bed of crunchy, local salad greens.
