Carrots have a new place in my heart now that I've discovered that everyone in the family will eat them. This is a mother's dream and one not easily realized. To find a food... no wait! a vegetable that all of us like (especially a 4 year old) is truly amazing. My husband even called me at work to share his joy of finding loads of green top carrots in our CSA share this week. This might not sounds so thrilling to you, but we're talking about a man whose idea of dinner, not too long ago, was frozen pizza. So "three cheers for carrots!," I say.
Still, each one of us has our preferences as to how to enjoy these lovely roots:
- Boiled for the baby
- Raw and Crunchy for the 4 year old
- Juiced for the husband
- Roasted for me with a little olive oil and honey
