Chicken Salad with Apples and Walnuts

You will need: Chicken breast, red or green apple, celery, walnuts, red onion, scallion, garlic, mayonnaise, lemon juice and tarragon.

In a large bowl combine 1 pound of cooked chicken breast, cut into small cubes, with 1 cup of diced apple, 1/2 cup diced celery, 1/4 cup toasted walnuts, diced red onions and sliced scallions.  Add 1 tablespoon of fresh chopped garlic, 1/2 cup of mayonnaise, a squeeze of fresh lemon and a pinch of tarragon.  Mix well and serve on a bed of greens, or stuffed into a garden fresh tomato.
