Fresh and easy, this recipe yields about 5 cups of salsa. Reserve 1 cup for
Quick Guacamole and still have enough to serve 8. If you like spicy
salsa, use the full amount of jalapenos and add more cayenne pepper.
Recipe Ingredients:
- 4 cups diced tomatoes (5-6 medium)
- 3/4 cup finely diced red onion (about 1 small)
- 1/4 cup red-wine vinegar
- 1-2 jalapenos, seeded and minced
- 1/2 cup chopped fresh cilantro
- 1/2 teaspoon salt
- Pinch of cayenne pepper, or more to taste
Recipe Steps:
- Combine tomatoes, onion, vinegar, jalapeno, cilantro, salt and cayenne in a medium bowl. Refrigerate until ready to serve.
