You will need: Cucumbers, scallions, feta cheese, lemons, fresh mint, basil and cilantro.
Peel, seed and dice 2 large cucumbers from your garden, then add 2 sliced scallions and 1/4 pound of cubed, locally made feta cheese and dress it with 1/4 cup fresh lemon juice, 2 tablespoons fresh chopped mint, 1 tablespoon each of fresh chopped basil and cilantro, and a pinch of salt and pepper. Let it sit 15 minutes, then garnish with lemon zest and serve with locally baked baguette slices.
