Terrific Tofu Salad

You will need: Tofu, lemons, vegetable oil, garlic, cherry tomatoes and fresh basil.

Cut 2 pounds of locally made, extra-firm tofu into small rectangular steaks about 1/2-inch thick, brush them with oil and grill until grill marks appear.  Remove the steaks from the grill and set aside.  In a bowl, whisk together a quick vinaigrette of equal parts lemon juice and vegetable oil, 2 teaspoons fresh chopped garlic, and 1 tablespoon of fresh chopped basil.  Add the dressing to the tofu and let it marinate one hour, then add a half pint of halved cherry tomatoes and season with salt and pepper.  Serve at room temperature with locally made tabouli.
