You will need: Green peppers, corn kernels, black eyed peas (or other cooked beans), smoked cheddar cheese, jalapeno pepper, butter, fresh cilantro, chili powder or Cajun spice.
Cut 2 or 3 green peppers in half lengthwise and set aside. In a bowl, combine about 1 cup of fresh cooked local corn kernels, 1/2 cup cooked black eyed peas, 1/4 cup smoked cheddar cheese, 2 tablespoons each of chopped jalapeno pepper, butter and fresh chopped cilantro. Portion the corn mixture into the peppers, drizzle with a little butter and top with some chili powder or Cajun spices. Bake in a 375-degree oven for 20 minutes and serve hot.
