You will need: Eggs, corn chips, red or green salsa, cheddar cheese and sour cream.
Scramble a few local eggs, add a handful of lightly crumbled, locally made corn tortilla chips and some of your favorite local green or red salsa. Simmer until the tortilla chips are slightly soft. Spoon the eggs onto a plate and top with local shredded cheese and sour cream. Serve with hot sauce and cornbread.
