Marinated Garden Vegetables

You will need: Broccoli, cauliflower, summer squash, zucchini, mushrooms, red bell peppers, and red wine vinaigrette.

In a pot of salted boiling water, lightly blanch 2 cups each of local broccoli and cauliflower florets, 1 cup each of sliced local summer squash and zucchini, and 1 cup of button mushrooms.  Drain and cool the vegetables, then add a 1/2 cup of chopped, grill-roasted red bell pepper slices or chunks, and dress with your favorite red wine vinaigrette dressing.  Add a pinch of fresh basil or herbs for garnish.  Serve with grilled hand-made sausage.
