Last week we had friends over for a homemade pizza dinner that included local veggies and handmade dough. It was a fabulous meal and we all agreed that no chain restaurant can beat a homemade pizza! Along with the pizza we enjoyed an arugula and strawberry salad. Now is the time to start drooling…
Pizza #1
1 large heirloom tomato (Cherokee Purple)—1/4” slices used instead of sauce
2 Cubanelle peppers cut into thin rings (lightly sautéed)
3 small red onions sliced thin (lightly sautéed)
1 cup Italian blend cheese
EVOO brushed on the crust and seasoned overall with oregano, thyme, and garlic
Pizza #2
1 large Cuore de Toro tomato (a paste tomato) simmered down with EVOO, oregano, thyme, and garlic to create the sauce
4 small red onions sliced thin and caramelized
2 links chicken sausage sliced
1 cup Italian blend cheese
EVOO brushed on the crust and seasoned
Although very simple in their ingredients, these were some seriously scrumptious pizzas! All the veggies for this meal were locally grown and the dough was handmade by my husband, the aspiring baker.
