My Full Earth Farm Dinner

So after visiting with Katie and leaving with a bag of goodies, I went home and got to work creating a meal with my tomatoes, cucumbers, and beans. This is what I came up with:

I stir-fried the purple beans with cubanelle peppers from last week's market trip. As the purple beans turned green from the heat, I threw in the halved cherry tomatoes and a tablespoon of tomato paste with a splash of water from the boiling pasta. All of this simmered together with garlic and fresh-cut oregano from my herb garden.

While those flavors blended together, I prepared a salad using arugula, also from last week's market, with the fresh cucumbers, and some scallions from my yard. I whipped up a honey vinaigrette dressing using local honey from Monticello.

Finally, it was time to toss the whole wheat rigatoni with the beans, peppers, and tomatoes then plate it up with the salad! YUM YUM!!!

AND my husband made what he is calling sage corn muffin puffs for dessert with berggarten sage straight from the garden!
