Three Meals Worth Noting

We had three meals this past week using local products that I thought were worth noting.

Grilled Roasted Vegetables

You will need: Any mix of eggplant, bell peppers, zucchini, summer squash, onions, mushrooms, scallions, and red wine vinaigrette.

Calabacitas

You will need: Summer squash or zucchini, onion, chili pepper, garlic, corn kernels, fresh oregano and vegetable stock.

Chopped Salad

You will need: Tomatoes, cucumbers, summer squash, red or green bell peppers, red onion, fresh mint and lemon vinaigrette.

Marinated Garden Vegetables

You will need: Broccoli, cauliflower, summer squash, zucchini, mushroom, red bell peppers and red wine vinaigrette.

Shells, Squash and Summertime CSAs

It's been a little chilly upstate New York, and not so rainy weather
has delayed some growth at the farm. My CSA share yesterday was minimal.
I got one tiny squash a few red onions, tomatoes, beets, baby greens and
garlic. We love garlic!

The past few weeks I've been getting a load I can barely hold in the
crowded subway. Yesterday's tiny load fit into a canvas bag with plenty
o'room to spare.
