Hi! Claudia here from Minneapolis; the "City of Lakes," near the headwaters of the "Mighty Mississippi" also known to have more food co-ops than any other metropolitan area in the U.S… while it has probably one of the shortest growing seasons.
You have to work pretty fast and hard around here in order to capture and preserve what we've got growing in the fresh produce realm each growing season. However, you can eat as much fresh meat, cheese, and beer year-round, as you can hold.
I have been learning, working, and teaching all things, FOOD for more years than I care to own up to. I am now in charge of the education and events programs at Seward Co-op, Grocery and Deli, located in the heart of Minneapolis where I’ve been for the last 41/2 years.
I live with my two teenage daughters and our pets just a few blocks away from work. I have an 8' X 10' garden in my tiny side yard.
This year I'm growing broccoli, lettuces, chard, and carrots, and have set aside another small area in front to grow native flowers and shrubs.
I also grow tomatoes and a variety of herbs in pots on my roof. I started canning what I can't eat fresh a couple of years ago; can't wait to start in again.Lots of fun! You'll be hearing form me.
